About
This large, edible root is native to tropical areas of the Americas. There are many varieties of sweet potato but the two that are widely grown commercially are a pale sweet potato and the darker-skinned variety we call "yams." (The true yam is not related to the sweet potato.)

Varieties
Pale-skinned
Thin, light yellow skin and pale yellow flesh. When cooked it has a dry, crumbly texture, similar to a white baking potato. The flavor is not as sweet as the darker variety.

Dark-skinned (know as Yams)
A thicker, dark orange skin with vivid orange flesh that is very sweet. It has a very moist texture when cooked.

Availability
Year-round.
